This is a very easy ‘one pot’ recipe for a delicious and very satisfying raw, vibrant soup. The soup was made at our Raw-Yoga Workshop and was very popular amongst the male participants, being a quick way to prepare a nutritious and tasty meal!
3 Cups chopped Tomato
1 Red Bell pepper
1/2 Cup chopped celery
1 Tbsp Miso paste (you can buy at Lulu, it is made of fermented soy or other grains)
1 Tbsp Lemon juice
1/2 Cup Sundried tomatos
1/2 Cup spring Onion
1/2 Cup fresh Parsley
2 Garlic Cloves
1/2 Cup water
Salt and Pepper to taste
Place all ingredients in a Blender (or place them in a bowl, using a hand blender), blend until smooth, taste and add seasoning, lemon juice or anything else until you create a tasty, yummy soup. You can add more water to make it thinner.
You can use any ingredients that you have in your fridge. The lemon juice, onion, garlic and fresh herbs bring the flavour in the soup, so try not to skip those. If you don’t have avocado, you can use a handful of cashewnuts, ideally soaked for a few hours.
