Ingredients for the tarts:
1 cup Cashewnuts
3 heaped TBsp flaxseed mill
1 TBsp coconut flour (optional)
2 TBsp sunflower seeds
5-7 dates
Blend all in a food processor until it starts coming together, place in cling film and roll with a rolling pin until flat. Cut your favourite cookie shape, and press in the center so that there is space for the filling.
For the filling:
Blend 1 mango with 3 dates until smooth
For the topping:
Goji berries and a sprinkle of sesame seeds and/or chia seeds
